Sugar in melons comes from leaf area, so protecting leaves until harvest protects taste.
What builds sweetness
- Healthy foliage to the end; control mildew and mites.
- Potassium during fruit set and swell; too much nitrogen gives vines, not sugar.
- Easing water in the last 7–10 days before harvest concentrates sugar. Do not stress plants earlier.
- Pollination: bees matter. Poorly pollinated flowers give small or misshapen fruit.
Judging ripeness
Check the tendril nearest the fruit (dry and brown), the ground spot turning cream-yellow, and a dull hollow sound when tapped. Handle gently; bruised melons spoil fast.
